Thanksgiving, Camping Style – 5 tips for a successful camping meal!

Pecan pie
1 prepackaged unbaked pie crust
1 cup sugar
1 cup light corn syrup
1 cup light brown sugar
3 Tbsp butter
3 eggs
1 cup pecans
IN a saucepan bring sugar, corn syrup, and brown sugar to a boil. Remove from heat and stir in butter. gradually add eggs into hot mixture. Add pecans stir well. Pre- baking the pie shell works great is you are using your Dutch oven. Pour mixture into pie shell and bake in Dutch oven 325 degrees for one hour. (16 coals on top- 8 coals on the bottom).

Cranberry Jalapeno Relish
24 oz fresh cranberries
½ c fresh lime juice
½ c water
2 Tbsp shallots chopped
1 tsp salt
1 bunch cilantro (to taste)
1 jalapeno seeded and chopped
1 Tbsp chopped garlic
2 ½ c sugar
Pulse cranberries in a food processor. Add all the ingredients except cilantro in pot and simmer and stir 20 minutes until thickened. Mix in cilantro. Cool before serving

Parmesan Garlic rolls
Texas size Rhodes rolls
1 c mozzarella cheese
1 c parmesan cheese
I Tbsp Italian seasoning
1Tbsp garlic powder
½ c melted butter
Spray Dutch oven liner with cooking spray. Thaw rolls but don’t let them rise. Cut rolls into ¼. Mix all ingredients together and spread over the top of rolls. Cook 350-40 minutes. 16 coals on top of Dutch oven 8 coals on the bottom.

Loaded Mashed potatoes
5 pounds potatoes peeled and cubed
¾ c sour cream
½ c milk
3 Tbsp butter
Salt and pepper to taste
3 c shredded cheese
3 green onions
Cover potatoes in water and bring to a boil. Cover and simmer for 10-15 minutes until tender.
Drain and place in large bowl. Add sour cream, milk, butter, salt, and pepper. Mash potatoes- stir in cheese and green onions. Transfer to Dutch oven and bake uncovered until cheese is melted.

Thanksgiving sausage dressing
1 box dressing
½ teas poultry seasoning
1 c chicken broth
2 eggs beaten
1 c onions- diced
1 c celery- chopped
16 oz sausage
3 cloves garlic-minced
Combine in a bowl dressing, poultry seasoning, chicken broth and eggs. Melt butter. Sauté onions and celery. Add browned sausage with the garlic. Mix well add to Dutch oven. Bake 325 approx. 20 minutes.
