Mason Jar Keto Pancakes:
⅓ c coconut flour
1 T Swerve sweetener
½ t baking powder
¼ t baking soda
¼ t salt
½ c buttermilk
¼ c sour cream
2 T unsalted butter, melted
In a mason jar, add the dry ingredients. Shake to mix. In another mason jar, add the wet ingredients. Shake to mix.
Add the wet to the dry ingredients. Shake.
Spoon onto a griddle and cook on the first side until the bottom is a golden brown and solid enough to flip. (Might take longer than the average pancake). I also recommend cooking these over low-medium heat.
Macros per pancake (makes 8): 77 calories, 5.9 g Fat, 3.9 g total Carb, 2.2 g net Carb, 2.3 g Protein
